These cookies are just mind blowing! I mean who don’t like peanut butter, right?More over it takes only 5 minute to make them. They are perfect on go, for snacking or as dessert even. Since I decided to not take any sugar for a while except for a natural one, which is in fruits, they will be perfect for sugar free diet! The other day my dear friend sent me the recipe, of course I played a bit with it and here is my version:
- 1 cup of roasted almonds
- 1 cup of figs
- 1/2 cup of peanut butter
- 1 1/2 teaspoons of pure vanilla extract
Without any doubts you can use any nuts you want, any of your favourite dry fruits, like dates would also go perfectly. And any other nut butter. Also it is optional to use honey or not. I felt that I wan to add a few tea spoons of honey…if you have a sweet tooth as well, you know
First you will need to process almonds, if you are using whole ones. Of course you can also use almond meal/flour. Then process the figs. Almost done! Take mixing bowl and throw in processed nuts and figs. Add vanilla, peanut butter (make sure no sugar added), and honey. Mix it well, until the mixture starts to form a dough, about 2-3 minutes. If it doesn’t seem to come together, just add another spoon or two of peanut butter. Form the dough into a balls. You can live them like that or then do as I did gently press with a fork to make criss-cross pattern…and Voila!
